Lemon Cream Cheese Bliss Balls

Here's a bliss ball recipe I started making when I had Type 2 Diabetes.

I had to look carefully to find erythritol in the supermarket, it's sold under different brand names and you have to read the label to work out what to buy.

From what I can find, erythritol doesn't affect glucose or insulin levels.


Ingredients

  • 1 cup almond flour
  • 1 cup unsweetened dessicated coconut
  • 1/3 cup of erythitol
  • 1 lemon, take the zest, then collect
  • 2 tablespoons of lemon juice
  • 100g of cream cheese
  • 1 teaspoon vanilla essence
  • some more dessicated coconut to roll them in


Method

  1. Mix almond flour, coconut and sweetener in a bowl (or a food processor with the dough hook)
  2. Add the remaining ingredients
  3. Mix into a thick "dough"
  4. Take dinner spoon sized lumps of mix, roll them into balls
  5. Roll the balls through the extra coconut
  6. Freeze them to set
  7. Defrost before eating
