Recipe: Freezer Ready Roast Potatoes

A way to prep roast potatoes into the freezer so you can take them out of the freezer straight to the oven.  Ingredients: 2kg potatoes, pick variety for roasting salt a couple of dessert spoons of flour 60ml / 1/4 cup of oil / just use your skill and judgement, who measures the oil for roasting really? Prep potatoes into roasting sizes chunks Add potato chunks to salty boiling water in a pan Cook potatoes for 10 minutes Drain potatoes, spread on a tray to allow them to evaporate dry. Drain and dry pan Put ptoatoes back in pan, sprinkle with flour and shake/toss them to cover and mash the edges of the potatoes a bit Put potatoes in storage container/bag, try to spread them out so they don't form a lump. Freeze them. When you want them later: Preheat oven and tray with oil to 180C Tip in potatoes, Allow to roast for 30 mins at 180C, then crank up for the last 15-20 mins at 220C If you are cooking meat, cranking the heat up to 220C can be done when you take the meat out to rest.
